So it's a little late to be eating dinner but we had baseball, homework, and showers to take care of. So my husband is passed out cold upstairs and I'm hungry. I look in the fridge and I see this block like thing of Tempeh. Pronounced Temp-ay. It's fermented soy and has a nutty chewy flavor. Only 230 calories per serving and a whopping 20g of protein. Did I mention 11g of fiber? Or 400mg of potassium? It looks gross in the package and looks even grosser (is that a word?) when you open it up. Don't freak out Just take a sharp knife and cut it into slices.

Then take a non stick pan and heat up some olive oil and lay the slices in the pan to fry. 4 minutes on each side and it's a yummy snack that you can dip into a almond butter-balsamic glaze. How do I make that you ask? Take half cup of balsamic vinegar, half cup of soy sauce, 2 tbs brown sugar and a dash of red pepper flakes. Bring it to a boil then take the pan off the heat. Whisk in a tbsp of almond butter (or whatever peanut type butter you have in the house). Wait till it's cool and then dip the Tempt-me-Tempeh into it. Delish.

P.S. You could dip anything into that glaze and it will be good tofu, veggies, etc.

P.P.S. I ate this with a spinach salad with a lot of lemon juice, little grapeseed oil (get it at trader joes), and some salt n pepa.
